  • “Russian” mustard – 1 teaspoon;
  • Egg yolk – 1 piece;
  • Sugar – 1 teaspoon;
  • Salt - to taste;

Let's start cooking:

Step 1. Boil the potatoes in their skins, cover with water to cool, peel and cut into small cubes.

Step 2. Boil the egg, cool in cold water, peel it and separate the white from the yolk, cut the white into small cubes. Set aside the yolk for the sauce.

There are several types of fish that occupy a special place in Russian cuisine. This is exactly what herring belongs to. As a rule, it is served as a separate dish, supplemented with thin rings of fresh onion and a piece of crispy rye bread. Another common option is a salad with a name that is incomprehensible to foreigners, “Herring under a fur coat.” These undoubtedly tasty and healthy fish snacks are so popular in Russia that many local chefs consider this fish almost a national treasure of their country. However, herring is also quite actively used in other cuisines, for example, Norwegian, Swedish or Dutch. We will try to cook the latter dish today.

Set of products for preparing herring salad:

  • pickled herring (200 g);
  • potatoes (8 small root vegetables);
  • mustard (30 ml);
  • salt;
  • sour cream (45 ml);
  • garlic (3 cloves);
  • apple (2 fruits);
  • hot peppers;
  • onion (1 root vegetable);
  • lemon (1 fruit);
  • dill.

Herring salad recipe

  1. First you need to boil small potatoes, preferably round ones. However, in the absence of one, it is quite acceptable to use medium-sized root vegetables, which should be carefully cut into small pieces before cooking. At this stage, do not forget to salt the water where our potatoes are cooked, and also add a little garlic and hot pepper.
  2. After cooking, transfer the potatoes to a separate plate and allow them to cool. It is important to remember that the pieces should not become overcooked, so it is recommended to carefully monitor this process.
  3. Next, we begin to create a spicy sauce that will decorate our future salad with unusual flavors. To do this, mix sour cream, mustard and fresh lemon juice, as well as a pinch of salt and just a little hot pepper in a small but deep bowl. Place the finished dressing in the refrigerator.
  4. Now cut pickled herring fillets into approximately equal pieces, preferably red onions and peeled green apples. We combine the prepared ingredients, add chopped dill, cooled potatoes and infused sauce. You can decorate the Dutch herring salad with chopped rosemary in combination with ground pepper. And a glass of dry white wine will certainly help to emphasize the refined taste of this cold appetizer.

Herring has a positive effect on brain function and improves vision. It is easily absorbed by the human body and is an ideal source of protein for it. Meanwhile, doctors advise hypertensive patients, people with diseased kidneys and those who suffer from edema not to get carried away with herring.

SALADS AND SNACKS

Canapes with herring

Bread (slices) - 5 pcs., herring fillet, apple - 1 pc., onion - ½ pc., egg - 2 pcs., dill, sour cream - 1-2 tbsp. l.

Boil the eggs and cut into circles. Toast the bread in a toaster or dry frying pan, using a cookie cutter to cut out 2 circles from each piece. Peel the apple. Cut the herring, onion and apple into cubes. Chop the dill. Mix everything together and season with sour cream. Place a circle of egg on each piece of bread and top with 1-2 tsp. herring salad.

Forshmak from chopped herring

Boiled eggs - 6 pcs., sugar - 1.5 tbsp. l., lightly salted herring - 200 g, onion - 1 pc., apple - 1 pc., vinegar - 2 tbsp. l., green onions - 40 g, vegetable oil - 1 tbsp. l., white bread without crust - 2 pieces, a pinch of pepper.

Wash the herring, remove the skin, remove the bones, save the head and tail. Pass the fillet through a meat grinder. Soak the bread in milk, peel the apple, remove the core and cut into large slices. Pass the bread through a meat grinder along with minced herring, apple and onion, mix well. Separate the whites from the yolks of 4 eggs. Wipe the yolks with 1 tbsp. l. vinegar, finely chop the whites and combine with minced herring. Add the remaining vinegar, pepper and mix everything thoroughly again. Place the resulting mass on a plate, give it the shape of a herring, attach the head and tail. Cut the remaining eggs into slices and cover the herring mince with them. Sprinkle finely chopped green onions on top. Season the yolks mashed with vinegar with sugar, pepper, vegetable oil, mix well and pour this mixture over the mincemeat.

Herring oil

Lightly salted herring (fillet) - 200 g, processed cheese - 200 g, carrots - 50 g, butter - 50 g.

Place the cheese in the freezer for 20 minutes to make it easier to shred. Boil the carrots. Cut the herring fillet and cheese into small pieces. To make cutting easier, wet the knife blade. Peel and finely chop the carrots. Mix herring, cheese, carrots and soft butter. Place in the refrigerator to cool the dish. Serve on slices of bread.

Salad with herring and apple

Egg - 1 piece, lightly salted herring - 1 piece, mayonnaise - 1.5 tbsp. l., apple - 1 pc., lemon juice - 1 tbsp. l., lemon slice - 1 pc., green onions - 2-3 feathers.

Boil a hard-boiled egg. Finely chop the herring. Finely chop the white of the boiled egg and the onion. Combine chopped protein, herring, green onions. Cut the apple into 2 parts, remove the seeds, and remove some of the pulp. Sprinkle with lemon juice. Finely chop the removed part of the apple and add to the salad mixture. Pour mayonnaise over and stir. Fill apple baskets with salad, sprinkle yolk on top, garnish with a slice of lemon.

Lightly salted herring in spicy marinade

Fresh herring - 3-4 carcasses, water - 0.6 l, sea salt - 5 tbsp. l., sugar - 4 tbsp. l., pepper (peas) - 10 pcs., bay leaf - 3 pcs., allspice - 8 pcs., cloves - 3-5 pcs., vegetable oil - 1 tbsp. l.

Boil the brine, cool and pour over the herring, placed in a pan upside down. Or place them in a three-liter jar with their noses down perpendicular to the bottom. Do not peel the herring! Salt whole. The head and insides of the herring contain enzymes that contribute to the acquisition of a bouquet of taste and aroma, and the process of ripening of the fish occurs. Refrigerate.

Warm potato salad

Potatoes - 600 g, black olives - 1 tbsp. l., boiled eggs - 2 pcs., Dijon mustard - 2 tsp., herring in dill marinade - 250 g, green onions - 4 pcs., salt, pepper, cucumbers - 2 pcs., natural yogurt - 8 tbsp. l.

Mash the boiled potatoes with a fork until you get medium-sized pieces. For dressing, combine mustard, mayonnaise, yogurt, add half of the chopped green onions and cucumber. While the potatoes are warm, season them with sauce. Chop the remaining onion and cucumber and eggs on top and mix gently. Place pieces of herring and chopped olives on top, pepper. Serve warm.

Herring in Dutch

Fresh frozen herring - 2 pcs., onion - 2 pcs., lemon - 0.5 pcs., sugar - about 6 tsp., salt - 6 tsp., carrots - 1 pc., bay leaf - 10 pcs. , black pepper - 10 peas.

Cut the herring into pieces, lemon into thin slices. Place in layers in a jar: on the bottom - several onion rings, bay leaf, grated carrots, a slice of lemon, 0.5 tsp. sugar, 0.5 tsp. salt, a pinch of pepper. On top is a layer of herring. Then again vegetables, spices, salt, sugar. So we alternate layers. Close the lid and put it in the refrigerator. On the second or third day the herring is ready. When serving, you can sprinkle with vegetable oil and lightly salt.

Pickled herring

Lightly salted herring - 3 pcs., bay leaf - 1 pc., onion - 2 pcs., sugar - 100 g, allspice (peas) - 2 tsp., mustard beans - 2 tsp., small piece of root horseradish - 1 pc., white wine vinegar - 300 ml.

Clean the herring and fillet it, removing the backbone and bones. Cut into pieces 2 cm wide. In a saucepan, bring vinegar, 150 ml of water and sugar to a boil. Add pepper, mustard seeds and bay leaf. Cool. Cut the onion into thin rings. Peel and chop the horseradish root. Place herring, onion and horseradish in a glass bowl. Pour over the marinade and refrigerate for 2 days.

SECOND COURSES

Herring stewed in oil in a slow cooker

Fresh frozen herring - 1 kg, onion - 1 pc., salt - 1.5 tsp, citric acid - 0.5 tsp, water - 3/4 tbsp., vegetable oil - 100 ml, spices for fish - 1 tsp, bay leaf, black pepper (peas).

Cut the fish into pieces, remove the head and entrails, sprinkle with spices. Cut the onion into circles. Dissolve citric acid and salt in 3/4 cup of water. Place onion, a layer of fish, pepper, and bay leaf in several layers on the bottom of the multicooker. Pour in water with salt and lemon, oil. Set to simmer (7 hours). In principle, the fish is ready after 4 hours, the bones are not yet soft, but they separate perfectly. After 7 hours of stewing, the bones will become soft, like canned meat. Transfer the fish to a separate bowl and cool.
