Add granulated sugar and yeast to a small amount of milk, dissolve the sugar (50 grams) completely in the milk, cover the cup with milk and yeast with a napkin and place in a warm place for fermentation.

While the yeast is rising, you need to sift the flour and melt the butter. When the yeast rises in a lush head, you need to add the remaining warm milk, granulated sugar, salt and vanilla sugar. Mix everything thoroughly until the sugar and salt crystals dissolve.

Break the chicken eggs into a separate cup and beat them lightly until the mass becomes homogeneous, and then pour them into a common container. We also send the melted butter there. Mix everything again.

While the dough is rising, you need to start preparing the curd filling. For the filling, it is best to use fatty cottage cheese, but it should not be too wet. You can grind the cottage cheese through a sieve so that the mass is homogeneous, or you can use unground cottage cheese with grains. I had two types of ready-made cottage cheese, I just mixed it and added a raw egg. In this case, when part of the cottage cheese is already soft, sour cream is not added. You will definitely need sour cream in dry cottage cheese. At your discretion, you can add salt and vanillin to the filling, but it is better not to use sugar right away. It is better to add it to the buns themselves during cooking. Mix all ingredients for the filling well and set aside for now.

Sprinkle the working surface with flour or grease with vegetable oil. The risen yeast dough must be kneaded before you start working with it. Very good proportions, the dough squeaks so pleasantly as you work.

The entire volume must be divided into small lumps. As always, my assistant helps me. The dough from the bread machine is kneaded quite well; when working with it, you may not even need flour at all.

For each cake we make two slits so that they are located opposite each other as far as possible, trying not to break through the edges.

All that remains is to try to stretch the cut edges, inserting one into the other, as if we were wrapping the filling and fastening the clothes with a button. Try to pinch the overlapping ends to the sides of the bun so that they do not roll back during baking.

The second option for making filled buns:

On each cake you need to make 3 cuts, let each petal of dough be different in size. That is, as a result we should get a rose. Place a tablespoon of curd filling in the middle of the flatbread and begin to wrap the petals. Take the smallest petal and carefully wrap it around the cottage cheese. Next, take a larger petal and wrap it around the cottage cheese on the other side, while fastening the petals together. We wrap the remaining largest petal around the already folded dough petals.

Place the finished buns with cottage cheese on a baking sheet greased with butter or vegetable oil and, if desired, grease with beaten egg or sugar water. Place the pan in a warm place to rise for 15-20 minutes.

Then you need to place the baking sheet with cottage cheese buns in an oven preheated to 180 degrees and bake for about 30 minutes (the time depends on the size of the buns).

The ingredients specified in the recipe make two baking sheets of buns or one baking sheet and a small pie.
