Kulich is a sweet, cylindrical shaped bread. We usually see this delicacy on the table on the day of Easter - the Holy Resurrection of Christ. However, why not treat yourself to some cake on a regular day? Moreover, if you have an oven and the necessary ingredients, any housewife can prepare it, even if she is on the Dukan diet. Cooking Dukan Easter cake is as easy as shelling pears.

Kulich according to Dukan recipe

For preparation we need the following ingredients.
For the test:

  • 4 tablespoons oat bran
  • 5 tablespoons skim milk;
  • 2 chicken eggs and 1 yolk;
  • 1 teaspoon baking powder;
  • half a teaspoon of sweetener;
  • a pinch of vanillin.

For the dough:

  • 2 tablespoons skim milk;
  • 1 tablespoon skim milk powder;
  • 1 teaspoon dry yeast;

For the white glaze:

  • 1 egg white;
  • half a teaspoon of sweetener.

For milk glaze:

  • 1 tablespoon cornstarch;
  • 4 tablespoons skim milk;
  • half a teaspoon of sweetener.

Preparing Easter cake is not a momentary task, so for clarity, we divide the entire work time into several necessary stages.

  1. First stage. Choose the filling and shape for the cake.
    Before we start preparing the Easter cake dough, let’s decide on its filling and shape. Traditionally, raisins are put in Easter cakes, but since we are on the Dukan diet, we will have to replace the raisins with Goji berries () or candied pumpkin. You can also add lemon or orange zest if none of the above is on hand.
  2. Dried zest is sold in stores, but you can make it yourself. To do this, take a lemon, cut off the top and remove the zest from the fruit in a spiral using a regular knife. Then the zest must be dried for 2-3 days, covered with paper so that it absorbs the moisture of the zest.
  3. After drying, grate the zest on a fine grater. As you can see, this is easy to do, but you must constantly ensure that there is no lemon pulp on the cut zest, otherwise the dishes will acquire a bitter taste after adding the zest to it. But even if you don’t have zest on hand, you can bake the cake without filling - it will still turn out delicious! As for the mold, there are paper, silicone and non-stick molds. It is most convenient to use paper ones - after baking the cake can be easily removed and thus not damaged. In addition, the cake in this form breathes and dries well. Silicone molds are not so convenient in this regard: removing the finished cake from them is more problematic, and when the baked goods cool down inside the mold, it acquires the characteristic smell of silicone. The last option is not bad - we recommend choosing a form with detachable sides.
  4. But we will still focus on the first option - the paper form. By the way, you can also make it yourself. To do this, take foil, baking paper and a regular jar or blender glass. We wrap the glass with foil, form the bottom of the mold - wrap the foil under the glass and press it well. Secure the foil with a paper clip and carefully remove the glass. Place a cut out circle of food paper on the bottom of the resulting form. The form is ready!
  5. Second phase. Preparing dough for Easter cake.
    At this stage you will have to work hard! Microwave the skim milk for 10 seconds while we mix the yeast and sweetener in one bowl. Pour the heated milk into a bowl, stir. Add dry milk. The result is a homogeneous mixture.
  6. Now comes the hard part. To make the yeast ferment faster, you can put it in the oven for a short time - in this case, preheat it to 50 degrees and place the covered bowl for a couple of minutes. We take it out and set it on the table to ferment. If a long time has passed and the yeast still has not fermented, then most likely the yeast is of poor quality. It’s easy to check: take 2 tablespoons of flour, a glass of warm water, a teaspoon of sugar and a teaspoon of yeast. Mix flour, sugar and yeast, add water, cover with a napkin and leave.
  7. If after 10 minutes you see that the yeast has boiled and fermented, then it is of high quality and can be safely used for Easter cake! If not, we suggest that you replace the packet of yeast, or wait some more time. So, if the yeast has started to ferment, then everything is great! Let's start the test.
  8. Third stage. Prepare the dough. Break 2 eggs and 1 yolk (they should not be from the refrigerator!). Beat the mixture with a fork - not a mixer - for half a minute.
  9. Then add all the dry ingredients to the eggs, with the exception of yeast. Mix the dough with a spoon until it has a homogeneous consistency.
  10. Pour in the prepared dough and stir. Place the resulting dough into the molds.
  11. Bake the cakes in an oven preheated to 180 degrees for about half an hour, until a brown crust appears. Once cooked, remove from the oven and cool the baked goods.
  12. Fourth stage. Preparing protein glaze.
    It's simple: beat the whites with sweetener until they form a stable foam. We recommend pouring glaze over the baked goods before serving the cake: otherwise, before you can blink your eye, it will spread all over the cake.
  13. Fifth stage. Prepare milk glaze.
    To do this, mix the starch with cold milk and sweetener, then put the mixture on low heat.
  14. Cook until the mixture thickens slightly, stirring constantly. Then remove the glaze from the stove and stir until it becomes warm. All that remains is to carefully brush the top with the resulting glaze.

Easter recipe according to Dukan

First of all, we will talk about the technology for preparing cottage cheese Easter according to Dukan. Since Easter according to Dukan is dietary, many might think that it would be baked in a slow cooker. This is wrong. We would like to present to your attention an Easter recipe that does not involve baking the product.

Ingredients:
  • about 600 g of granular cottage cheese with a low fat content;
  • 200 g soft curd;
  • 100-150 ml skim milk;
  • 4 eggs (we only need the yolks from them);
  • 1 tablespoon SOM (skimmed milk powder);
  • sweetener that you are used to using;
  • 1 tablespoon lemon juice;
  • vanillin.

Step 1: So, first, let's deal with cottage cheese. It must be thoroughly beaten and kneaded so that no lumps remain. You can use a blender for this.

Powders from an unknown manufacturer, which can be bought in some markets, are a little worse. Any powdered stevia should first be dissolved in 25 ml of water, and only then added to baked goods;
  • corn starch, sold almost everywhere, including online stores for the Dukan Diet;
  • powdered oat bran. The main flour substitute, if the diet is followed religiously, they probably already exist. It is worth buying the lowest-hydrogen option, and not bran with fragments of oat grain (in appearance they resemble pieces of cereal).
  • How to cook Easter dishes according to Dukan

    Basic Easter cake recipe

    400 g of cottage cheese 0%, 4-5 proteins, 1 egg, 4-5 tablespoons of oat bran, stevia powder, a spoon of corn starch, 2 spoons of skimmed milk powder, baking powder, low-carb glaze (in online health food stores), or 120ml of any low-fat, sugar-free yoghurt, plus a little extra sweetener plus a pinch of cinnamon.

    Dissolve stevia in 25 ml of water, stir thoroughly. Pour this water over the bran and leave. Beat the whites until foamy, add the egg, and cornstarch with skim milk. Beat until the mass becomes homogeneous, gradually add cottage cheese and bring the consistency to creamy. Combine with bran. Place the dough in a silicone cake pan, bake at 180 degrees in the oven (takes about half an hour), or in the microwave, spending 5-6 minutes at maximum power.

    Cool the cake and remove it from the mold. Mix yogurt with cinnamon and sweetener and pour on top. You can decorate with goji berries allowed on the diet, and the same ground cinnamon, making all the traditional inscriptions on a white background with it.

    Easter cake with yogurt

    200 g low-fat yogurt, 2 scoops of protein or 2 heaped tablespoons of skim milk powder. 2 eggs, or 1 egg and 4 whites, 6 tablespoons of bran, sweetener, baking powder.

    Add sweetener to yogurt, place in a blender bowl and mix at medium speed for about 5 minutes, add whites, egg, mix until thick, add bran and baking powder. Pour the dough into a cake pan and bake the cake. Decorate with available decorative products.

    Multi-colored sprinkles for Easter cakes

    5 egg whites, 2-3 packets of stevia sweetener, food coloring in assorted colors, baking parchment.

    The sprinkles will resemble crumbs rather than balls, but you can also use them to decorate Easter cakes. First you need to preheat the oven to 180 degrees. Beat the whites until foamy, add sweetener. Divide the mixture into portions and add separate food coloring to each. Apply a thin layer (you can use a pastry brush) of the multi-colored mixture onto the parchment sheets. “Dry” in the oven for 2 hours at a temperature of 150 degrees (reduce the temperature after heating the oven), remove and chop. You can store this topping in a glass container with a lid.

    Easter

    For “raisins” – cinnamon powder, 2 egg whites, 1 teaspoon bran, 2 teaspoons skim milk powder, sweetener, 1 teaspoon cocoa.

    For the base - 400 g of cottage cheese, 100 g of yogurt, 1-2 packets of agar (optional, to add thickness), sweetener that suits your taste and like.

    Making raisins is quite simple. Beat the whites, soak the bran in sweetened water, add milk, stir until smooth. Drop by teaspoon onto a sheet of parchment, forming small balls. You can use a regular baking bag with a corner cut off, or a cooking syringe for this purpose. Bake in the microwave on high power, about 3 minutes. Cool, remove from sheet, and can be stored in a glass jar for several days.

    Sweeten the cottage cheese with stevia and water, place in a blender bowl along with yogurt, and beat for about 5-6 minutes at medium speed. You should get curd cream. Dissolve agar in water according to instructions. Add to the curd cream and turn on the mixing mode again for 3-4 minutes. There should be no traces of undissolved agar in the resulting curd mass. Add imitation raisins, stir with a spoon, place in an Easter pan, place in the refrigerator for an hour or two to harden.

    For those who eat goji, you don’t have to complicate your life by preparing imitation raisins, but simply add 1-2 tablespoons of berries slightly soaked in water to the dish.

    Chocolate Easter

    1-2 tablespoons no added sugar cocoa, powdered stevia or liquid flavored "chocolate" sweetener, 400 g soft creamy cottage cheese, 1 tablespoon yogurt, low-carb chocolate chips, or imitation raisins from the previous recipe.

    Combine cocoa with yogurt and sweetener. Stir until the powder is completely dissolved and a homogeneous mass is obtained. Add cottage cheese, mix, combine with imitation raisins, put in a mold and leave in the refrigerator until hardened.

    Vanilla Easter with candied fruits

    For “candied fruits” - 2 tablespoons of bran, a flavored sweetener with the scent of orange, peach or pineapple (in Dukan diet stores), or any available stevioside and citrus essence, 2 egg whites, 1 tablespoon of cottage cheese, a sheet of baking parchment.

    For Easter: a packet of vanillin, 600 g of low-fat creamy cottage cheese, sweetener to taste, 100 ml of sugar-free yogurt (optional, and if the cottage cheese is dry).

    Beat the whites, combine with bran, add cottage cheese, sweetener and essences. Knead the dough, use a culinary syringe or using a regular bag with a cut corner to form “drops” of dough, place them on parchment, bake in the microwave for 3-4 minutes. Cool, remove from parchment. You can sprinkle the “candied fruits” with powdered cinnamon.

Preparation

Let's start preparing these wonderful Easter cakes. To do this, separate the whites from the yolks. Add all the other biscuit ingredients to the yolks except salt. Beat until smooth. Beat the egg whites with salt until very stiff peaks form. There should be a spoon in the whites - we need to beat them to this state. Gently mix with the dough so as not to fall off (whites must be added in parts, each time mixing with light movements from bottom to top until smooth)
Pour the dough into cake molds (I use three metal molds with a diameter of 10 cm and a height of 10 cm. You can use one large mold. If you use one round mold, it should be no more than 18 cm in diameter.)

Fill the molds to 2/3 of the height.

If desired, you can insert decorative paper molds for Easter cakes into the molds - then they should be greased with a drop of oil.

Bake at 180 C for 20-25 minutes until the stick is dry. We do not open the oven the first time of baking so that the cakes do not settle!

When the cakes are baked, turn off the oven and leave for 5-10 minutes. Then open the oven door and cool the cakes completely without removing them from the oven. We take the finished cakes out of the molds and place them on a wire rack.

We cool it this way - otherwise the sponge cake will fall off and the cakes won’t turn out so fluffy!


Let's prepare the glaze for our Easter cakes. Heat the milk, DO NOT BOIL! Add starch and sugar to the heated milk, stir until smooth so that there are no lumps. Place back on the stove and simmer over low heat, gradually stirring until thick. Cool (glaze should remain slightly warm)

Cover the cooled cakes with icing and place in the refrigerator until hardened!

If desired, the Easter cakes can be decorated with pieces of live sweets.

Here the Easter cakes are decorated with colored sprinkles, but this is just for decoration! (it is not allowed because it contains sugar)
