How to prepare squid carcasses

Of course, you will have to tinker a little and spend some time on it, but believe me, the result is worth it.

When purchasing these wonderful seafood, pay attention to their appearance. In our region they are most often sold frozen. The squid should be pink in color and should not be frozen in a single briquette - this indicates that the product has been thawed and frozen several times. Each carcass in the package must be separate.

Squids must be thawed and cleaned. I put them in a deep plate and place them under running hot tap water and immediately start cleaning them. The skin of a high-quality shellfish can be easily removed under the influence of temperature. We remove the skin, entrails and chord - we have clean squid ready for stuffing.


How to prepare the filling for stuffing squid

Cut the champignons into cubes and fry in a frying pan with vegetable oil for 10 minutes, lightly salt. Then add finely chopped onions, stir and fry for another 5 minutes until the onions are golden.


Boil the eggs in water for 10 minutes after boiling, then add cold water and wait for them to cool completely. Remove the shells and cut the whites and yolks into small cubes.


Boil the rice in your usual way.

Grate the cheese on a coarse grater (keep a handful aside).

Combine mushrooms, eggs, rice and cheese in a deep salad bowl.


Thoroughly mix all the prepared minced meat components, adding mayonnaise to them.


How to stuff squid

Place the filling into each squid carcass using a teaspoon, lightly compacting it and moving it upward.

You shouldn’t “stuff” the squid too much with minced meat, as the carcass will shrink slightly in size during the cooking process.


Place the stuffed squid carcasses in a heat-resistant dish (I used a glass one, any other will do).


Coat the squid with sour cream and sprinkle with grated cheese on top.


Bake in the oven for 25 minutes at 180 degrees. Cooking time and temperature can be slightly adjusted to suit your oven.

During the baking process, the squid will release juice, and the top will be covered with an appetizing crust.


After removing the pan from the oven, immediately place on serving plates, garnish with green salad leaves, and serve.

  5. First, squid stuffed with rice is fried in a frying pan until crusty, then transferred to a mold, poured with sour cream and stewed for 25-35 minutes at medium temperature.
